Coconut sugar (also known as coco sugar, coconut palm sugar or coco sap sugar) is created from the flowers of the coconut tree. New sprouts of coconut flowers are cut and then tied together before they are pollinated and become baby coconuts. The tied flower bundle will bleed a sap, which is harvested. The sap is heated until it becomes a caramel, which is then dried into a sugar. Finally, the sugar is filtered through meshes with different thread counts, and the higher the thread count, the finer the sugar granulates. Coconut sugar has been used as a traditional sweetener for thousands of years in the South and South-East Asian regions where the coconut palm is in abundant supply.
